Sweet Potato Salad


  • 3 medium-sized sweet potatoes
  • ½ cup basil, chopped
  • ½ cup red onion, chopped
  • ¼ cup extra virgin olive oil
  • ¼ cup coconut oil
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp sea salt
  • ½ tsp ground mustard


  1. In a medium saucepan, bring 4 cups of water to a boil. Chop the sweet potatoes into bite-sized pieces and place in the boiling water. Turn the heat down slightly, and let the potatoes cook for approximately 20 minutes (until soft).
  2. As the potatoes are cooking, prepare the dressing. In small food-processor, pulse together the lemon juice, honey, vinegar, salt, and mustard. Slowly add in the olive oil and coconut oil. Pour the dressing into a bowl or jar to let it set before adding it to the potatoes.
  3. Drain the cooked potatoes; set aside to cool.
  4. When the potatoes are cooled, mix in the basil and red onion. Add the dressing and stir until the potatoes are well-coated.


Makes approximately 4 servings.
