
Sweet Potato Salad
Ingredients:
- 3 medium-sized sweet potatoes
- ½ cup basil, chopped
- ½ cup red onion, chopped
- ¼ cup extra virgin olive oil
- ¼ cup coconut oil
- 2 tbsp lemon juice
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tsp sea salt
- ½ tsp ground mustard
Preparation:
- In a medium saucepan, bring 4 cups of water to a boil. Chop the sweet potatoes into bite-sized pieces and place in the boiling water. Turn the heat down slightly, and let the potatoes cook for approximately 20 minutes (until soft).
- As the potatoes are cooking, prepare the dressing. In small food-processor, pulse together the lemon juice, honey, vinegar, salt, and mustard. Slowly add in the olive oil and coconut oil. Pour the dressing into a bowl or jar to let it set before adding it to the potatoes.
- Drain the cooked potatoes; set aside to cool.
- When the potatoes are cooled, mix in the basil and red onion. Add the dressing and stir until the potatoes are well-coated.
