
Green Apple Salad
- 1 medium-sized granny smith apple
- 4 cups lettuce (mixed varieties)
- ¼ cup pecans, chopped
- ¼ cup sliced almonds
Dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 2 tsp dijon mustard
Preparation:
- Cut the apple into small cubes. In a medium-sized bowl (or individual servings), top the lettuce with the apple cubes, pecans, and almonds.
- In a separate bowl, whisk together the olive oil, honey, vinegar, and mustard. Drizzle the dressing on the salad.
