Zucchini Pasta with Vegetarian Tomato Sauce

Ingredients

4 medium organic zucchini
1 Tbs coconut oil
dash of celtic sea salt (to taste)
1 medium onion, chopped
2 cloves garlic, minced
3 Tbs dried basil
2 Tbs dried oregano
2 cans organic crushed tomato (you can finely chop 4 large ripe tomatoes and process them if you are feeling really keen).

Preparation:

  • Wash zucchini thoroughly, then cut the ends off. Peel the zucchini to get a true “pasta” look, but you can keep the peels on (more nutrients!). Center the zucchini in the spiralizer and turn the handle to create the “pasta”; you can also use the slicer attachment on food processor. If you are using the attachment piece, you should “double slice” the zucchini to get thin noodles.
  • If the noodles are wet, pat them with a paper towel to soak up any access moisture.
  • Add coconut oil to a 9 inch skillet and sauté noodles on medium heat for approximately 3 minutes. This will soften the noodles and they will be more pasta-like.
  • Over medium heat, mix together crushed tomato, onion, and garlic in a saucepan. Cover and simmer until heated thoroughly. Add basil and oregano and continue to simmer for 3-5 minutes.
  • Spoon sauce over zucchini noodles and enjoy!

NOTE: Zucchini noodles can also be eaten raw; they are especially good in cold salads.
