Green Apple Salad

  • 1 medium-sized granny smith apple
  • 4 cups lettuce (mixed varieties)
  • ¼ cup pecans, chopped
  • ¼ cup sliced almonds

Dressing:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 2 tsp dijon mustard

Preparation:

  1. Cut the apple into small cubes. In a medium-sized bowl (or individual servings), top the lettuce with the apple cubes, pecans, and almonds.
  2. In a separate bowl, whisk together the olive oil, honey, vinegar, and mustard. Drizzle the dressing on the salad.

Enjoy!

Makes approximately 4 servings.
